Here is an Nt recipe to try that incorporates soaking grains. These give a soft fluffy pancake or waffle. You don't have to worry about a weird smell by leaving the buttermilk flour mixture out overnight, just make sure it's covered and your fine. In fact once it's sat for awhile the buttermilk smell deminnishes quite a bit replaced by a nutty wheat smell. Two and one half cups each wholewheat flour and buttermilk, stir until well combined. The next morning add 1 teaspoon salt, 2 tablespoons molasses or honey, you can add up to 1 quarter cup honey or molasses depennding on how sweet you like them. 1 teaspoon baking soda, 2 eggs well beaten, and 2 tablespoons very soft butter. Stir and stir until your batter is smooth and light. Heat your favorite heavy skillet and off you go. Use about 1/3 cup batter per pancake. This makes enough to feed at least six people. These hold fruit and nuts very nicely, use honey when adding fruit to them. These are our favorite pancakes in the whole wide world. Serve with real preserves and real butter. Eat and be amazed.
